Homemade mortadella
Instructions
Finely chop the meat and pork-rind with meat grinder and mixer and mix with ground spices, salt, peppercorns, pistachio nuts and the fat into small pieces.
Place the dough in the gut and after having closed, go in the oven at 90° c for 4-6 hours, keeping the humidity with a pan of water.
Once cooked the mortadella, immerse it in a pan with cold water and store in the refrigerator until consumption.

- 70% of lean pork meat
- 25% of pig fat
- 5% of rind boiled
- Variety of aromas
- Salt
- Peppercorns
- Pepper
- Big sausage casings
