Ticino rice soup
Instructions
FRY in a knob of butter, onion and parsley.
Add the chopped Bacon, prosciutto rind boiled and cut into small pieces and the tablespoon of oil.
Add fresh beans, celery, carrots, tomatoes, and cabbage all coarsely chopped and whole peeled potatoes.
Squirt with a glass of wine, add salt, add the beef broth and cook for about an hour.
Crush the potatoes, add the rice, you have previously boiled in plenty of salted water, sprinkled with Parmesan cheese and serve.
Ingredients and dosing for 6 persons
- 300 g of rice
- 100 cl of beef broth
- 20 g of pork belly
- 50 g of pork rinds (or ham fat)
- 200 g of fresh beans
- 300 g of cabbage
- 1 potato
- 1 onion
- 3 stalks of celery
- 2 carrots
- 2 tomatoes
- 1 sprig of parsley
- 1 tablespoon of olive oil
- 1 glass of wine
- Salt
