Peasant Soup (Minestra Del Contadino)
Instructions
Clean the vegetables, cut them and put them in a saucepan on the stove with corn, peas and a nut.
Let simmer over low heat for about 40 minutes, then add the pasta, chopped parsley and olive oil.
Add salt and cook for about 10 minutes before serving with Parmesan cheese.
Ingredients and dosing for 4 persons
- 1/2 box of corn flour
- 1/2 box of peas
- 1 potato
- 1 courgette
- 1 leek
- 1 handful of parsley
- 1 tomato
- 1 nut
- 3 tablespoons of olive oil
- 100 g of fresh taglierini pasta type
- Grated parmesan cheese
- Salt
