Spicy eggplant
Instructions
Slice the eggplant, salt them and leave them to lose water.
Cut them into strips and FRY in plenty of oil.
Keep them warm.
In the frying oil the Eggplant sauté the garlic and the anchovies dissolve.
Combine 1 tablespoon vinegar, chopped parsley and mix well.
Pour the sauce over the Eggplant and serve.

- 4 eggplant
- 6 anchovy fillets
- 2 cloves of garlic
- Olive oil
- Salt
- 1 tablespoon of wine vinegar
- 1 tablespoon of chopped parsley
