Put stockfish in a pot of cold water, and boil and turn off the heat.
Let cool for about 20 minutes, then drain and remove the spines.
Mash the flesh and put it in a tall and narrow container where you can mix with a wooden spoon, slowly adding olive oil.
Continuing to spin with energy, you will get a ' cream ' which is seasoned with salt, white pepper, garlic and chopped parsley.
Serve cold.
