Onion gratin
Instructions
Bring to the boil a pan of salted water.
Peel the onions, throw them in boiling water and let them cook for fifteen minutes.
Heat the oven to 170 degrees (5 thermostat).
Dissolve 50 g of butter in a saucepan.
Add the flour, stir for a minute, add the milk little by little without ceasing to stir.
Bring to a boil, simmer 5 minutes.
Add salt and pepper, stops cooking, add the mustard.
Stir thoroughly.
Put the onions in a colander, let them drain well, close to the sauce.
Pour it all into a baking dish.
Sprinkle bread crumbs and butter flakes.
Bake and simmer 20 minutes: the surface of gratin should be golden.
If you don't find the onions you can choose small onions all alike or use large onions cut into slices: the presentation is less perfect, however.

- 500 g of scallions
- 3 tablespoons of flour
- 1 tablespoon of strong mustard
- 65 g of butter
- 40 cl of milk
- 3 tablespoons of breadcrumbs
- Salt
- Pepper
