Sole fillets with potatoes
Instructions
Boil the potatoes in boiling salted water for 20 minutes holding a little back to cooking, then drain, Peel and privatel cut into cubes.
Slice the onion into very thin slices.
In a skillet cook the fillets of sole with milk, then drain keeping the milk, place on a serving dish and keep warm.
In a Pan fry the onion with butter, add the potato, anchovy fillets chopped and diluted with the cooking of milk sole.
Add salt, add a pinch of pepper, and simmer for 15 minutes, then pour the potatoes over the sole fillets and serve immediately.
Ingredients and dosing for 4 persons
- 1 pack of frozen fillets of sole
- 1 onion
- 2 anchovy fillets in olive oil
- 600 g of potatoes
- 25 cl of milk
- 40 g of butter (or margarine)
- Salt
- 1 pinch of pepper
