Peel the onion, celery, carrot and mince. Cut the pancetta into small dice. Peel the potatoes, cut them into chunks small and regular warm soapy water and rinse. Heat the oil in a saucepan and gently fry the mixture for a few minutes, add the bacon and FRY for a few minutes, and tinged with half a glass of white wine.
Put the potatoes in saucepan and let stand for a few minutes mixing them continuously, and add tomato. Cover with warm water, add salt and simmer at moderate heat for about 30 minutes with the lid. When the potatoes are tender, add water if necessary to cook the dough, stir and continue cooking the pasta. Serve hot with grated cheese.
