Braised veal in rocket sauce
Instructions
Cut the slices into strips of veal in order to obtain the "bits". Clean the arugula, and falla lavala drain. Tritala coarsely. Put the butter in a saucepan and melt. Combine the shallots cut into very thin slices and wither. Add the Arugula and cook flaw for three minutes, stirring often and making sure they don't burn. Combine the cream and continue cooking for 5 minutes. Turn off the fire and condisci with salt and freshly ground white pepper, mix well and keep warm.
Meanwhile, put a pan on a moderate flame fire and then heat the extra virgin olive oil. Then sauté the veal strips on both sides for 2 minutes. Then pour the white wine and deglaze high flame. Turn off the fire, powder with salt and freshly ground white pepper and mix. The system bits on a serving dish and then pour over the hot rocket sauce. Serve at the table. Accompany with grilled radicchio trevisano.

- half a glass of dry white wine
