Casunzei
Instructions
Make the dough with 4 eggs and almost double their weight (from shell) of flour (it must be a bit softer than usual).
Let it sit under a towel.
Soak the bread in milk, squeeze it well and side pockets.
Join the sausage released by the gut and crumbled and the grated Parmesan and a little salt.
Prepare casunzei as indicated above, boil in salted water and season with butter, grated Parmesan and a few leaves of Sage.
