Artichokes in olive oil (3)
Instructions
Clean the artichokes by hard leaves and cut the stem, leaving only an inch.
Fill a container with water, add the juice of three lemons and a glass of vinegar and soak up the artichokes, washing well.
Prepare a large pot with 3-4 litres of water, the rest of the vinegar, the juice of lemon and salt.
Just boil will immerse the artichokes and cook for about ten minutes.
Drain and let cool.
Made of glass jars, put the artichokes and cover with oil, putting every now and then, between a layer and the other, mint leaves, oregano, garlic and red pepper pieces.
Close and let it season a month before enjoy it.
