Greek artichokes
Instructions
Take the very tender artichokes, clean them thoroughly, discarding tough leaves.
Cook covered with oil and water, by calculating a third seed oil and two of water.
Add salt, add some grain of pepper, a sprig of thyme, a bay leaf and some onion rings.
During baking (it will take about 40 minutes) the liquid should be absorbed and the artichokes must remain almost dry.
Serve cold, accompanied by olives as an appetizer, or hot, as a side dish to a beautiful omelette.
