Instructions

Clean (depriving them of entrails and head) and wash pescetti in water and vinegar; dry them on kitchen paper.

Warm up in the proper place, oil, flour the pescetti, scrollarli and place them a few at a time in hot oil causing them to Brown and become crisp, then place on paper towels, salalrli and serve with a slice of lemon.
