Tenderloin carpaccio
Instructions
Clean the radicchio, washed, cut into strips; brush a sheet of metallised paper with oil, wrap the white part of the radicchio, with lightly salted and peppered hearts, Cook in preheated oven at 180 degrees for 10-12 minutes; remove from the oven, allow to cool and cut into small pieces.
Place in a bowl the balsamic vinegar, lemon juice, olive oil, a pinch of salt and pepper and beat them lightly with a fork.
Arrange the meat slices on plates, brush on a little prepared sauce, place above the white part-baked radicchio, red leaves dressed with a little salsa and deploy the grana cheese flakes.

- 300 g of beef thin sliced
- 2 heads of radicchio di treviso
- 80 g of grana cheese in flakes
- 10 cl of olive oil extra virgin
- 1 teaspoon of balsamic vinegar
- 3 tablespoons of lemon juice
- Salt
- Pepper
