Instructions
Blanched chicory in boiling water for 5 minutes.
Sgocciolatela, squeeze and cut coarsely.
In a saucepan melt the butter and insaporitevi chicory for about 10 minutes to fire.
Pour over the boiling broth.
Beat the eggs with plenty of grated cheese, a pinch of salt and pepper, mix all the soup.
With the prongs of a fork, divide the egg mixture that tend to aggregate.
Toasted bread, breakdown the aim in individual bowls and immediately pour over the hot soup.

- 700 g of chicory salad
- 30 g of butter
- 2 eggs
- Abundant of grated cheese
- 100 cl of broth
- 4 slices of bread
- 1 pinch of salt
- 1 pinch of pepper
