Cut into slices lengthwise Zucchini.
FRY a few at a time in hot oil.
Drain, put them in a dish in layers, sprinkling each layer with Mint, Basil and chopped garlic, a pinch of salt, a drizzle of olive oil and a splash of vinegar.
Let marinate for 2 hours and serve.
