Poached eggs with caviar
Instructions
Reduce in tiny cubes (sweated) Green Zucchini and shallots; seasoned with a little olive oil, salt, lemon juice and let marinate for an hour.
Grease with butter croutons of bread, tostateli, then make yourself comfortable over poached eggs and guarnitele with a teaspoon of caviar.
Serve the croutons on a bed of vegetable brunoise, chopped lettuce, supplementing with other caviar.

- 1 jar of caviar
- 6 bread croutons
- Butter
- 1 zucchini (green part)
- 1 shallot
- 1 small head of lettuce salad
- Lemon juice
- Olive oil extra virgin
- Salt
