Marinate the meat with the vegetables and the wine for 1 hour.
Wrap in pork and cook in salt-crusted oven to 200 degrees for 40 minutes.
Prepare the sauce squeezing pomegranate beans (keep by about 10 each for garnish).
Emulsify the juice with the vinegar, oil and salt.
Cut the breast into slices and drizzle with the sauce.
