Sopa de albòndigas
Instructions
In a large saucepan to Brown onion and garlic in the oil without coloring them.
Add water and meat extract and concentrate dissolved in lukewarm water.
Bring to a boil and add the potatoes and carrots.
Let simmer for 5 minutes.
Meanwhile, mix the beaten egg with chopped parsley, salt and pepper and a pinch of oregano.
Add the meat and uncooked rice and stir well.
Form the mixture into meatballs the size of a walnut and add them gradually to the broth.
Bring back to a boil, lower the heat and let simmer for 30 minutes.
Serve hot.

- 1 chopped onion
- 1 clove of chopped garlic
- 2 tablespoons of olive oil
- 4 cups of water
- 2 tablespoons of meat extract
- 150 g of tomato paste
- 2 peeled potatoes and cut into cubes
- 2 carrots sliced
- == 1 beaten egg
- 30 g of parsley
- 450 g of minced beef
- 60 g of rice
- Salt
- Pepper
- Oregano
