Instructions

Sprinkle the fillets of sole with a bit of white wine, pass them in flour and place in a greased non-stick pan with little butter.

Place half on each fillet sottiletta, then sprinkle with 1 pinch of Parmesan; season with salt and drizzle with a few tablespoons of white wine.

Put in hot oven and cook for 15 minutes.

Serve hot.
