For the famous bistecca alla fiorentina is a must use young beef; the cut of Tenderloin and Sirloin steak includes and should be about 2 inches.
Put the steaks on the grill over coals as possible of charcoal; Cook 5-6 minutes per side, then flavour with salt and pepper; leave on the heat for a moment and serve immediately season with a drizzle of olive oil.
