Brain sauce
Instructions
Bring to a boil a pan of water with the bay leaf and the lessatevi brains.
Hard boil the eggs.
Drained the brains, put it in a bowl and a wooden spoon mash thoroughly.
Mix the egg yolks mixture, softened with oil enough to obtain a homogeneous sauce.
Chop the chives, parsley, capers and add them to the sauce.
Season with lemon juice filtered to colander set, for the amount, according to your taste.

- 1 small brains
- 2 egg yolks
- 1 lemon
- 1 cipollina
- 1 tablespoon of capers
- 1 sprig of parsley
- 1 leaf of laurel
- Olive oil
- Salt
