Wheels with eggplant and ricotta salata
Instructions
Saute garlic, add the puree and basil.
Aside from cut the Eggplant into small cubes and FRY in olive oil.
To blend it with the past, drain the pasta and toss in pan with sauce.
Serve garnished with Basil and grated ricotta.

- 200 g of type pasta wheels
- 1 eggplant
- 200 g of ricotta salata
- 2 cloves of garlic
- 200 g of tomato
- Olive oil extra virgin
- Basil
- Salt
