Instructions

Tie the piece of meat, place it in a baking dish oval rather fonda, sprinkle with a tablespoon of olive oil and the butter in small pieces.

Pass then in very hot oven.

During cooking, sprinkle with the sauce often, that you'll get to the bottom of the baking dish, time to colorirsi well on every side.

If you see that the meat is too dry add gradually with a little restricted stock that you have warmed up.

The meat will take about 30 minutes to cook.

Take the roast beef from heat, salt and pepatelo.

Serve immediately on the table, partly sliced.
