Rigatoni alla gricia
Instructions
Put together in a pan with oil, lard, Bacon cut into fillets and chilli, remove the pillow just local and keep it warm.
Add chopped onion and garlic to the Pan and fry them.
Return the bacon to the Pan and season.
Remove from the heat.
Cook the rigatoni until al dente, drain and toss with the sauce of bacon, sprinkle with the cheese and serve.
Ingredients and dosing for 4 persons
- 400 g of type rigatoni pasta
- 200 g of pork cheek
- 3 tablespoons of olive oil
- 1 tablespoon of lard
- 1 onion
- 1 clove of garlic
- 1/2 chili
- 100 g of grated pecorino cheese
- Salt
