Celeriac Puree (Purè di Sedano Rapa)
Instructions
Peel the celeriac and cut into pieces.
Put them in a saucepan, cover with milk and let Cook for 15 minutes, until they become tender.
When the pieces of celeriac are tender, put them in the blender with their cooking juice and reduce it to puree.
Put the puree in saucepan, add salt and pepper, let it cool down.
Add the butter little by little stirring with a whisk.
If you puree seems too liquid, add a little cream.
For an original presentation, serve this mashed inside of cups made with tomatoes and cooked in oven flushed for five minutes.
If you prefer to serve it in a soup-tureen, you will go very well with chicken or roast kid.
