Maturation: from 8 to 10 days of maturation emptied entrails and kept cool or wrapped in lugo in the lower part of the refrigerator.
Arrange the mushroom caps in a baking sheet lightly greased with oil, with the concave part upwards, putting in each of three beccafichi, add salt, pepper, drizzle with a little olive oil and bake in moderate heat.
