Instructions
Quantities are for 500 g of pasta.
Sift the flour and salt over a bowl.
Cut the butter into 1.
5 cm cubes and throw in the flour.
Add the lemon juice and 12 cl of iced water, then stir quickly to obtain a light paste.
If necessary, add one or two tablespoons of water.
Place the dough on a lightly floured surface and drag it to a rectangle of 30 x 15 cm, with sides and corners well straight with the help of a ruler.
Fold one-third of the dough toward the center of the rectangle, then the third remaining on the other two.
Seal edges, rotate the dough 90 degrees.
Stretched, bent and turn the dough twice.
Wrap the dough in a piece of plastic wrap, then in a damp cloth and leave it in the fridge, before you shape it.
