Instructions

The ingredients are for 400 g of pasta.

Sift 250 g of flour and 1/2 tablespoon of salt into a bowl.

Cut 125 g butter diced of say 1/2 cm and put them in flour.

Soak the flour into the butter with two knives, until the crumbs will form.

Infarinatevi your hands and place them in the Bowl Cup.

Take small amount of mixture and let them slip between your fingers, squeezing gently as they pass the palms of butter.

Repeat seven times until the crumbs will become.

Beat an egg yolk in a Cup.

Add 1 teaspoon cold water.

Stir, then pour in the flour and stir with a fork.

Add another teaspoon of water into the bowl to dissolve well the rest of yolk and gradually pour on pasta.

Keep on stirring with a fork until three-quarters of the dough is well blended.

Continue to knead by hand until a ball-shaped pasta.

Wrap it with foil and let rest 1 hour in the refrigerator.
