Oysters au gratin with spinach
Instructions
Clean and wash the spinach.
Put them in a saucepan with a pinch of salt and cook fresh focus for 5 minutes.
Drain, chop coarsely and strizzateli.
In a skillet heat the oil, add the spinach, pepper and let stand for 3 minutes.
Put oysters and chopped shallots in a saucepan, and cook with high heat for 5 minutes until you open the valve.
Remove from heat and shelled molluscs keeping aside the filtered cooking liquid.
For the white sauce mix cream butter, add the cream and flour and diluted with the cooking of the oysters needed to obtain a soft and creamy sauce.
Add the oysters and spinach, put the mixture into a buttered baking dish; Sprinkle cheese and gratinate in the oven at 220 degrees for 5/10 minutes.
Serve immediately.

- 48 oysters
- 500 g of spinach
- 2 shallots
- 3 tablespoons of olive oil
- Pepper
- Butter
- For the white sauce:
- 25 cl of cream
- 40 g of butter
- 40 g of white flour
- 30 g of grated gruyere cheese
- Salt
