Coarsely chop the meat, put it in the Blender jar with the butter into small pieces and blend until you have a soft cream; put it in a bowl and add, a little at a time, the mascarpone, cream, brandy and pepper, stirring with energy.
Put the mixture into the pocket of canvas and formed large clumps, resting them on a tray.
Store the preparation in the refrigerator for at least 4 hours, then serve.
