Soup of fava beans and chicory
Instructions
Boil the beans in lightly salted water and pass through a sieve with the cooking water.
Sauté the onion with oil and stir the puree of Fava Beans.
Mix cream of Fava Beans already boiled chicory and coarsely chopped, add the broth, check the salt and pepper.
The soup is rather dense.
Serve immediately.

- 400 g of fave
- 100 g of chicory salad
- 10 cl of olive oil
- 1/2 chopped onion
- Beef broth or bouillon vegetable bouillon
- Salt
- Pepper
