Bean curd soup with cicoriella and onions
Instructions
Wash the beans.
Place in a crock pot and cover with cold water 200 cl.
Soak them a day, season with salt and cook for 3-4 hours low inaugurated in focus.
Stir occasionally with a wooden spoon.
When cooked the beans will become a puree.
Add the trimmed already cooked.
Finely chop the onions, hold them for 30 minutes under running water.
Drain and coat with oil, vinegar and salt and merge them to soup after having separated from the fire.

- 500 g of dried peeled fava beans
- 500 g of wild cicoriella
- 2 red onions
- Apulian olive oil
- Salt
- Wine vinegar
