Masanete salad
Instructions
Washed the masanete (female crabs), then boil in plenty of lightly salted boiling water; You should put in the pot still alive to make sure they are fresh.
Cook for seven to eight minutes, no more, then turn off the heat and let them cool in their water.
Drain, remove the legs and, with an Earwig, cut the carapace.
Put the masanete in a salad bowl, season still warm with chopped garlic and parsley, oil, salt and pepper.
Let them rest for at least an hour because they absorb the seasoning, then serve, perhaps accompanied by slices of polenta.
