Cut the meat into small pieces, put them in a glass baking dish brushed with oil.
Beat the eggs with salt, pepper and lemon juice.
Heat the stew over low heat, pour in the eggs, stir quickly so that the pieces of meat are veiled by the cream.
Withdrawn after 2 minutes, serve warm.
Accompanying wines: Bardolino DOC, Bolgheri DOC Rosato, Alezio Rosato DOC
