Fried perch
Instructions
Clean the fish without bones and headless, beat them slightly.
Combine chopped parsley and garlic.
In a bowl, mix chopped, provolone cheese, whole egg, half the breadcrumbs.
Salt and pepper stirring.
Stuff the fish with the mixture.
Garnish with Sage and roll stopping with a toothpick.
Beat an egg with salt and pepper.
Flour rolls.
Pass them in the egg and then in bread crumbs.
Heat oil and butter when frying mix the rolls.
Brown on both sides.
Serve covered with mayonnaise.

- 500 g of perch
- 100 g of grated provolone cheese
- 30 g of chopped parsley
- 60 g of butter
- 1 clove of chopped garlic
- 2 eggs
- 1 tablespoon of flour
- 1 lemon
- Sage
- 2 tablespoons of breadcrumbs
- 2 tablespoons of seed oil
- Mayonnaise
