Artichoke Salad (Insalata di Carciofi)
Instructions
Prepare an emulsion of olive oil, lemon juice, salt, pepper.
Clean the artichokes and fennel; cut into segments and place them in water acidulated with lemon juice.
Drain well centrifugandoli.
Place in individual dishes.
Sprinkle each dish with slivers of cheese and drizzle with the emulsion.

- 2 round fennel
- Some scales of caciocavallo cheese
- Lemon juice
- Chervil
- Olive oil extra virgin
- Sea salt
- White pepper
