Artichoke salad
Instructions
Clean the artichokes, cut in half and deprive them of hay.
Keep them for 1/2 hour in cold water acidulated with lemon juice.
Clean the celery and carrot.
Finely slice the artichokes, irrorarli with half a lemon and salt.
Add the julienned carrots and celery slices.
Add salt, pepper and drizzle with 4 tablespoons oil.
Sprinkle with the Parmesan.

- 3 artichokes
- 1 small celery
- 1 carrot
- 50 g of parmigiano
- 1 1/2 of lemons
- Olive oil
- Salt
- Pepper
