Herb omelette
Instructions
Beat the eggs with the cheese and add chopped herbs.
Salt.
Melt the anchovies in 2 tbsp oil in a pan and pour in the beaten eggs.
Cook for 5 minutes, turn the omelette halfway through the cooking.

- 8 eggs
- 30 g of grated pecorino cheese
- 1 anchovy fillet
- 1 tablespoon of herbs (thyme, marjoram, parsley, oregano)
- 2 tablespoons of olive oil
- Salt
