You cut a pig skin into small pieces and mix with pork, cut into pieces.
The mixture is seasoned with black pepper, red pepper, fennel and salt; you let it sit for a while and it introduces in the guts.
The cotechini are finally tied with string every 10 cm and leave to dry for about a month in a cool smoke.
You use to flavor beans soups or sauces for pasta.
