Green tomato chutney
Instructions
Wash the tomatoes and chop them finely.
Peel the onions and chop.
Peel the garlic and crushing.
Rinse raisins and sgocciolatela.
Put tomatoes, onion, garlic, raisins and sugar in a large saucepan.
Put ginger, pepper of Jamaica and salt in a bowl, add some vinegar and stir.
Pour the mixture in the saucepan.
Pour the remaining vinegar in saucepan, heat stirring fresh focus until the sugar is completely dissolved.
Bring to the boil, lower the heat and let simmer for an hour and fifteen minutes, stirring every so often.

- 350 g of black sugar
- 15 g of ginger powder
