Chop the almonds with sugar until very large grains. Whip the egg whites until foamy soda and mix them together with the almonds and the sifted flour.

The almond paste is ready and you can use it alone, creating small pastries which are then baked at 180° c for 15-20 minutes (as in the picture), or as a base for other sweet preparations.
