Clean the outer Peel by grape hyacinth and eliminating the lower part with the roots. Put them to soak for an hour in cold water and then repeatedly sciacquali under cold running water to remove any trace of dirt. Drain when they're big and boil in plenty of salted boiling water for 20-25 minutes depending on the thickness: should be cooked al dente.

Toglili from the pan with a ladle pitted and forward them in a bowl with cold water and leave them to soak for half an hour. Then drain when they're to let them drain well in a colander. Available on a serving dish pinching slightly downwards so that open slightly and then condisci with salt, freshly ground black pepper and extra virgin olive oil.
