Steam spinach Quenelle
Instructions
Place in steamer spinach into cubes and cook until it will be perfectly softened. Salt and pepper lightly. Pass then on a serving dish and toss with olive oil, freshly ground pepper and a pinch of nutmeg.
Allow to cool and settle the quenelle with the help of two teaspoons (tablespoons according to desired size) by putting a bit of dough on a teaspoon and pass it to another several times until obtaining the perfectly oval shape.
