Potato pudding, salmon and mushrooms

01696 POTATO PUDDING, salmon and mushrooms INGREDIENTS for 4 PEOPLE a box of mashed potatoes, 1/2 litre of semi-skimmed milk, 1/2 l water, 200 g of fresh salmon, 200 g mushrooms, 2 onions, 2 eggs, 2 tablespoons cream, nutmeg, a tablespoon of butter, bread crumbs, salt, pepper, oil.
Preheat oven to 200° prepare the mashed potatoes with water, milk, a tablespoon of olive oil and a pinch of salt.
Clean the mushrooms with a damp cloth and cut them into slices.
Coarsely chopped onions.
In a pan heat a few tablespoons of oil and sauté the chopped onion until it is golden.
Add the mushrooms and cook for 5 minutes.
Mix the mashed potatoes with the cream and beaten eggs; Add the mushrooms and salmon cut into pieces; season with salt, pepper and a pinch of nutmeg.
Pour the mixture into a mould cake type, previously buttered and dusted with bread crumbs.
Bake and cook in a double boiler 30 minutes.
Serve.
