Avocado stuffed with rice and fried onions

00614 AVOCADO STUFFED with rice and FRIED ONIONS INGREDIENTS for 4 PEOPLE 50 cl vegetable broth, 150 g of long grain rice, one shallot, 10 cl of peanut oil, 2 onions, 300 g of frozen spinach in bunches, 25 g butter, 2 large avocados, salt, pepper.
Boil the broth and rinse the rice under running water.
Peel and mince the shallot and FRY in hot oil 5 cl 5 minutes for fresh focus, add the rice and stir.
Sprayed with hot broth and continue cooking for the time indicated on the package.
Add salt and pepper.
Peel and cut the onion into small pieces, fry them for 5 minutes over high heat, in the rest of the oil, keep them aside on a plate covered with paper towels and salt them.
You find spinach in hot butter for 8 minutes over medium heat; drain, pour, along with onions, rice and stir.
Add salt and pepper and let cool for an hour in a cool place.
When serving, cut the avocado in half, denocciolatelo and fill with rice lightly squeezing the preparation.
Serve immediately.
