Peel the jackdaws depriving them of the petiole and any strands.

Wash and boil in salted boiling water for a few minutes so that they remain crisp and beautiful Greens.

When they are ready, drain and raffreddatele retire them in cold running water.

Drain well on absorbent kitchen paper.

Pour the cream in a saucepan and let it reduce by about half; remove from heat and add the Grana Padano cheese, egg yolk, salt and pepper.

Stir well and add the sugar snap peas with this sauce.

Pour the sugar snap peas with sauce in a baking dish with low sides and put in preheated oven (220°).

Serve sprinkled with roasted hot sauce.
