Instructions

04398 PUMPKIN SOUP with ALMONDS INGREDIENTS for 4 PERSONS 800 g pumpkin clean, 50 g butter, 2 onions, a glass of fresh cream, 4 tablespoons chopped roasted almonds, egg yolk fillets, chicken broth, salt and pepper.

Melt the butter with chopped onion and let dry; Add the pumpkin cut into sticks, salt and pepper.

Flavour for a few minutes, then add the hot soup (the broth should be twice the amount of pumpkin); Bake for 25-30 minutes to slow fire and when cooked pass everything in Blender.

Put on the fire and simmer soup, if it is too thick, add more broth, tied with the egg yolk whisked together with cream sauce and served with toasted almonds.

You can make this soup with meatballs, with chopped herbs and grated cheese, you can boil the soup at the last minute.

If you want to impress, you can serve the soup directly into the pumpkin, which will serve as a soup tureen, in this case bought a pumpkin? mantovana?, big and yellow, cut it in the lead (you will need to cover), remove the seeds and the pulp and proceed with the recipe.
