Instructions

04036 TOASTED FLOUR SOUP and ONION (ZWIEBELSUPPE TRENTINO) INGREDIENTS for 4 PEOPLE 40 g of white flour, 60 g butter, a large onion, 1 teaspoon sugar, one tablespoon of vinegar, salt.

To accompany: buttered breadcrumbs.

Peel the onion and cut it into very thin slices.

Heat about a liter of water and, if you prefer, of broth.

Heat the butter in a saucepan and, when it starts to take an amber color, add the flour.

Let's toast the flour for about 10 minutes, on low heat, stirring constantly with a whisk.

Pour 1/2 of hot liquid and stir immediately.

Diluted and then with the remaining liquid and add salt.

Let simmer for half an hour and add, at the end, with sugar and vinegar.

Serve immediately with croutons.
