Toasted hare
Instructions
After having washed the lean of the Hare along with liver and heart chop with Sage, garlic, Rosemary sausages Bacon and anchovies.
Sauté in a pan with half a glass of olive oil, a clove of garlic with a bit of pepper.
When the garlic begins to Brown add chopped everything in the Pan, then add a glass of wine and let Cook in covered saucepan for about an hour, adding if necessary a little broth.
When the cooking is to combine one tablespoon of olive oil and two tablespoons of vinegar and let it season to fire again for a few minutes.
Pour the mixture in spoonfuls on hot bread croutons.

- 1 hare
- 2 sausages
- 2 slices of bacon
- Sage

- 2 salted anchovies
